How to cook it

  1. Fry the diced chicken in the oil in a frying pan until no longer pink, then add the chopped onion and the peas and carrots and cook until the onion softens, about 4 minutes.

  2. Add the rice and break it up, then stir in most of the ketchup with half the salt and the pepper and toss until every grain is evenly red. Divide among four plates and shape each portion into an oval.

  3. Beat the eggs with the milk and the remaining salt. For each omelette, melt a quarter of the butter in a small nonstick pan over medium heat, pour in a quarter of the egg and stir gently until it is just set underneath but still soft on top.

  4. Slide the omelette over a mound of rice, or put the rice on the egg and fold it over, and repeat with the rest.

  5. Finish each with a line of the remaining ketchup. Children in Thailand know omurice from the Japanese chain restaurants, and it is an easy home dinner for families who picked Japanese food.

When to cook it

Omurice (Japanese Ketchup Rice Omelette) takes about 25 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
