How to cook it

  1. Cut the fish into thick steaks or large fillets.

  2. Combine the vinegar, water, sliced ginger, smashed garlic, and black peppercorns in a wide pan and bring to a boil without stirring; letting vinegar boil undisturbed first tames its sharp edge.

  3. Slice the eggplant into thick rounds and add them to the pan along with the salt.

  4. Simmer 3 minutes until the eggplant starts to soften.

  5. Lay the fish pieces on top of the vegetables in a single layer.

  6. Cover and simmer gently, without stirring, until the fish is cooked through and flakes easily, about 12 minutes.

  7. Add the Thai chilies for the last 2 minutes.

  8. Serve hot, spooning the braising liquid over the fish, alongside the jasmine rice.
