How to cook it

  1. Freeze the ribeye for 20 minutes, then slice it as thinly as possible.

  2. Heat the butter in a skillet over medium and cook the sliced onions and pepper until soft and golden, about 8 minutes, then push to one side.

  3. Add the oil, the sliced beef, and garlic, season with salt and pepper, and cook until browned, about 5 minutes.

  4. Mix the beef and vegetables together and divide into four piles in the pan.

  5. Lay provolone over each pile and let it melt, about 1 minute.

  6. Scoop each portion into a toasted hoagie roll and serve.
