How to cook it
-
Heat the grill. Halve the tomatoes, sit them cut side up on the grill pan, season with a little black pepper and grill for 6 to 8 minutes until soft and starting to char.
-
Bring a wide pan of water to a bare simmer and add the vinegar. Crack each egg into a cup first, then slide it gently into the water. Poach four at a time for about 3 minutes, until the whites are set and the yolks are still soft.
-
While the eggs cook, toast the wholemeal bread and spread each slice thinly with the lower-fat spread.
-
Lift the eggs out with a slotted spoon, let them drain on kitchen paper for a moment and set two on each slice of toast. Serve with the grilled tomatoes and a grind of black pepper.
