How to cook it

  1. Peel and cube the potatoes and boil in salted water until fork tender, about 15 minutes, then drain and mash with half the butter and the milk.

  2. Meanwhile slice the pork tenderloin into thick medallions and season with salt and pepper.

  3. Heat the oil in a skillet over medium-high heat and cook the medallions until browned and just cooked through, about 3 minutes per side, then set aside.

  4. Add the remaining butter and sliced onion to the same pan and cook until soft, about 6 minutes.

  5. Stir in the thyme and chicken stock and simmer until slightly reduced, about 5 minutes, scraping up any browned bits.

  6. Return the pork to the pan to warm through and serve hot over the mash, spooned with the pan sauce.
