How to cook it

  1. Simmer the pork belly in the water with the onion and salt until tender, about 45 minutes, then drain and cool.

  2. Chop the pork into small bits.

  3. Heat the oil in a skillet over high heat and sear the chopped pork until crisp at the edges, about 8 minutes.

  4. Add the garlic, red onion, and red chilies and stir-fry 2 minutes.

  5. Season with soy sauce, lime juice, and black pepper.

  6. Spread the sisig onto a sizzling plate or hot skillet, crack the egg over the top, and stir it through as it cooks, about 1 minute.

  7. Serve immediately while still sizzling.
