How to cook it

Peel and boil the potatoes until tender, about 15 minutes, then drain and mash while hot with 2 tablespoons of the butter and the salt.

Work in the flour to form a soft dough, then turn out and pat into a round about 1/2 inch thick.

Cut the round into quarters to make the farls.

Melt the remaining butter with the oil in a skillet over medium heat and fry the farls until golden and speckled, about 4 minutes per side.

Fry the eggs in the same pan and serve each farl topped with a fried egg.
