Print or share this recipe
Ragi Dosa (Instant Finger Millet Dosa) is South Indian home cooking, eaten at breakfast and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
The quantities follow this count.
How to cook it
-
Whisk the ragi flour, rice flour and salt with the water into a thin batter with no lumps, about as thin as buttermilk. It needs no fermenting.
-
Stir in the finely chopped onion, green chilies, ginger, cumin seeds, torn curry leaves and cilantro, and let it stand 10 minutes.
-
Heat a tawa until hot and stir the batter well, since the flour settles to the bottom. Pour a ladle from a few inches up, starting at the edge and working inwards, so it lands as a lacy round like rava dosa. Do not spread it with the ladle.
-
Drizzle oil over the holes and around the edge and cook on medium heat about 3 minutes until the dosa is crisp and lifts easily. It is not usually flipped.
-
Fold it and eat it at once with coconut chutney or sambar, stirring the batter again before every dosa.
Serve it with
A South Indian dinner is a plate rather than a single dish. These are the courses that normally sit beside Ragi Dosa (Instant Finger Millet Dosa), read from the same composition Dinejot builds a real meal from.
