  1. Break the papads into bite-size pieces by hand, no need to fry them, they'll soften in the gravy.

  2. Whisk the curd with the besan, turmeric, chili powder, coriander powder, and a cup of water until smooth and lump-free.

  3. Heat the ghee in a pan, add the mustard and cumin seeds, and let them crackle.

  4. Pour in the curd mixture, stirring constantly over low heat so it doesn't curdle.

  5. Add the remaining water and salt, and simmer 8 minutes until the gravy thickens slightly.

  6. Drop in the papad pieces just before serving so they soften but keep a little bite, simmering 2 to 3 minutes.

  7. Garnish with cilantro and serve hot with rotis or rice.
