  1. Trim the tough bottom ends of the water spinach and cut the stems and leaves into 3-inch lengths, keeping stems and leaves separated.

  2. Wash the greens thoroughly in a large bowl of cold water and spin or shake dry.

  3. Mince the garlic finely.
