Lentil Soup

Lentil Soup is British home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre and the soup. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

How to cook it
-
Heat the oil in a large saucepan and soften the onion, carrots and leek over a low heat for about 8 minutes, stirring now and then, without letting them brown.
-
Rinse the lentils in a sieve, then add them to the pan with the hot stock. Two stock cubes to the 1.5 litres is about right, and a gluten-free cube keeps the pot safe for anyone avoiding gluten.
-
Bring it to the boil, skim off any foam, then cover and simmer for 20 to 25 minutes, stirring once or twice, until the lentils have collapsed and the carrots are tender.
-
Leave it chunky or blend half of it for a smoother bowl. Season with black pepper, taste before adding any salt because the stock is already salty, and stir in the parsley.
-
Serve hot, with a slice of bread on the side for anyone who wants one. It keeps for 3 days in the fridge and thickens as it sits, so loosen it with a splash of water when you reheat it.

A British dinner is a plate rather than a single dish. These are the courses that normally sit beside Lentil Soup, read from the same composition Dinejot builds a real meal from.

Lentil Soup takes about 40 minutes from a cold stove to the table, and the cooking itself is easy going. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
