How to cook it

  1. Heat the oven to 325F.

  2. Season the lamb with salt and pepper.

  3. Heat the oil in a large ovenproof pot and brown the lamb in batches, about 6 minutes, then set aside.

  4. Cook the diced onion and carrot in the same pot until starting to soften, about 5 minutes.

  5. Thinly slice the potatoes.

  6. Layer the lamb, onion, and carrot in the pot with the bay leaf and thyme, pour in the beef stock, and arrange the sliced potatoes on top in overlapping layers.

  7. Dot the potatoes with butter, cover, and bake until the lamb is tender, about 2 hours, then uncover and bake until the potatoes are golden, about 20 minutes more.
