How to cook it

  1. Cook the bacon in a large pot over medium heat until crisp, then add the smoked sausage and brown, about 5 minutes; remove both and set aside, leaving the fat in the pot.

  2. Add the onion and bell pepper and cook until softened, about 5 minutes.

  3. Stir in the tomato paste and cook 1 minute, then add the rice and toast for a minute, stirring to coat.

  4. Add the diced tomatoes, chicken broth, bay leaf, cayenne, salt, and pepper, and return the sausage and bacon to the pot.

  5. Bring to a simmer, cover, and cook over low heat until the rice is tender and the liquid is absorbed, about 25 minutes.

  6. Remove the bay leaf, fluff with a fork, and serve.
