  2. Heat a grill for direct and indirect heat.

  3. Sear the tri-tip over the hottest part of the grill until browned on both sides, about 4 minutes per side.

  4. Move to indirect heat and cook, turning occasionally, until an instant-read thermometer reads 130F for medium-rare, about 25 minutes more.

  5. Rest the meat 10 minutes, then slice thinly against the grain, watching for the grain to change direction partway through the roast.
