How to cook it

  1. Peel and boil the potatoes in salted water until tender, about 18 minutes, then mash with the butter, milk, and half the salt.

  2. Heat the oven to 400F and warm the olive oil in an oven-safe skillet over medium-high.

  3. Brown the lamb, breaking it up, then add the onion, garlic, and carrots and cook 6 minutes.

  4. Stir in the flour and tomato paste for 1 minute, then pour in the broth and Worcestershire and simmer until thick, about 8 minutes; stir in the thyme, peas, and remaining salt.

  5. Spread the mashed potatoes over the filling and rough up the surface with a fork.

  6. Bake until golden and bubbling at the edges, about 25 minutes, then rest 5 minutes before serving.
