How to cook it

  1. Cook the orzo in salted boiling water until al dente, then drain it.

  2. Heat 2 tbsp olive oil in a skillet and soften the onion and garlic, about 5 minutes.

  3. Add the crushed tomatoes, red pepper flakes, and salt and simmer until thickened, about 10 minutes.

  4. Stir in the shrimp and cook until just pink, about 4 minutes.

  5. Fold the orzo into the sauce, then scatter the feta over the top.

  6. Cover briefly to warm the feta, then finish with parsley and serve.
