  1. Combine the beef and water in a large pot, bring to a boil, and skim any foam.

  2. Cover and simmer until the beef is nearly tender, about 2 hours.

  3. Add the taro and radish and simmer until the taro begins to break down and thicken the broth, about 20 minutes.

  4. Stir in the tamarind paste, long beans, and green chili, and simmer 8 minutes.

  5. Season with the fish sauce, fold in the kangkong, and serve hot with rice.
