How to cook it

Cook the sushi rice according to package directions, then fold in the rice vinegar while warm and let cool slightly.

Slice the Spam into 8 planks and fry in a dry skillet over medium heat until browned, about 2 minutes per side.

Whisk the soy sauce and brown sugar in a small bowl, add to the pan, and simmer until it glazes the Spam, about 1 minute per side.

Press a block of rice into a musubi mold (or an empty Spam can with both ends removed) set on a strip of nori, top with a slice of glazed Spam, and press to compact.

Fold the nori up and around the block, sealing the end with a dab of water, and repeat with the remaining rice, Spam, and nori.

Scatter with sesame seeds and serve, or wrap for a lunchbox.
