Spanakopita Dinner

Heat the oven to 375F.

Thaw the spinach and squeeze out all of the water.

Cook the onion in a little olive oil until soft, then mix it with the spinach, feta, beaten eggs, scallions, dill, and salt.

Brush a baking dish with melted butter and layer in half the phyllo sheets, brushing each with butter or olive oil.

Spread the spinach filling evenly over the phyllo.

Top with the remaining phyllo sheets, brushing each with butter, and score the top into squares.

Bake until the phyllo is deep golden and crisp, about 45 minutes, then cool 10 minutes before cutting.
