Heat the oven to 375F and slice the tops off the bell peppers, removing the seeds.

Heat the olive oil in a skillet and brown the ground beef with the onion and garlic, about 7 minutes, then drain.

Stir in the cooked rice, diced tomatoes, Italian seasoning, half the cheddar, salt, and pepper.

Stand the peppers upright in a baking dish and fill them with the beef mixture.
