  1. Heat the oven to 375F and slice the tops off the bell peppers, removing the seeds.

  2. Heat the olive oil in a skillet and brown the ground beef with the onion and garlic, about 7 minutes, then drain.

  3. Stir in the cooked rice, diced tomatoes, Italian seasoning, half the cheddar, salt, and pepper.

  4. Stand the peppers upright in a baking dish and fill them with the beef mixture.

  5. Add a splash of water to the dish, cover with foil, and bake 30 minutes.

  6. Uncover, top with the remaining cheddar, and bake until melted, about 10 minutes more.
