How to cook it

  1. Pat the kingfish steaks dry and rub them with the red chili powder, kashmiri chili powder, turmeric, ginger garlic paste, lemon juice and salt. Let them marinate 20 minutes.

  2. Spread the rice flour on a plate and press each steak into it, coating both sides in a thin, even layer.

  3. Heat the oil in a flat tawa or wide pan over medium heat until shimmering.

  4. Lay the steaks in without crowding and cook 4 minutes a side, pressing gently, until the crust is golden and crisp and the fish flakes easily at the thickest point.

  5. Serve hot with a wedge of lemon, dal and rice.
