  1. Saute the garlic and onion until soft, then add the ground pork and cook until no longer pink.

  2. Stir in the finely diced potato and carrot and cook until just tender, about 5 minutes. Season with salt and pepper and let cool slightly.

  3. Beat the eggs in a bowl and stir in the cooled pork mixture.

  4. Heat the oil in a nonstick pan and pour in a portion of the mixture, spreading it into a flat round.

  5. Cook until set and golden on both sides, flipping once, and repeat with the remaining mixture. Serve hot with rice.
