Filipino Chicken Curry

Cut the potatoes and carrot into large chunks.

Heat the oil in a pot over medium-high heat and brown the chicken on all sides, then set it aside.

Add the onion and garlic to the pot and cook until softened, about 3 minutes.

Stir in the curry powder and cook until fragrant, about 30 seconds.

Return the chicken to the pot, add the water, bay leaves, fish sauce, and salt, and bring to a simmer.

Cover and cook until the chicken is nearly tender, about 15 minutes.

Add the potatoes and carrot and simmer until nearly tender, about 12 minutes.

Pour in the coconut milk and add the bell pepper, then simmer until the chicken is cooked through and the vegetables are tender, about 8 minutes more.
