How to cook it

Melt the butter in a small saucepan and whisk in the flour, cooking for a minute.

Gradually whisk in the milk and simmer until thickened, about 3 minutes.

Remove from the heat and stir in the cheddar and mustard powder until melted and smooth, then season with pepper.

Toast the bread and heat the oven grill (broiler) to high.

Spread the cheese mixture thickly over the toast, place on a tray, and grill until bubbling and golden, about 3 minutes.
