Heat the oil in a small pan and fry the finely chopped onion 3 minutes until soft and just turning colour.

Add the chopped tomato, green chilies, turmeric, red chili powder, cumin and salt and cook 3 minutes until the tomato has broken down.

Beat the eggs lightly and pour them in, then wait ten seconds before you touch them.

Stir slowly with a flat spoon, pushing the eggs from the edge to the centre, so they set in soft folds rather than small dry grains.

Take the pan off the heat while the eggs still look slightly underdone. They will finish in their own heat.

Scatter the coriander leaves over and serve immediately with paratha or double roti. Ladle out a child's portion before the green chilies go in.
