How to cook it

  1. Bring the water to a boil with the salt, then pour it over the corn flour and mix with a spoon until cool enough to handle.

  2. Knead the warm dough 5 minutes. It has no gluten to hold it together, so the hot water and the kneading are the only things that will.

  3. Take a ball of dough and pat it flat between your palms, or press it out between two sheets of plastic. It will crack at the edges, which is normal.

  4. Patch the cracks with wet fingers as you go and keep the roti thicker than a wheat one.

  5. Cook on a hot tawa for 2 minutes a side, pressing gently with a cloth, until brown spots appear and the surface looks dry.

  6. Smear generously with ghee and eat it hot with sarson ka saag. It goes stiff as it cools, so cook them as they are eaten.
