How to cook it

  1. Make a soft dough with the atta, salt and water, knead it 6 minutes, and rest it 15 minutes.

  2. Beat the eggs with the finely chopped onion, green chilies, coriander leaves, black pepper and a pinch of salt.

  3. Roll a ball of dough into a thin round and cook it on a hot tawa for 40 seconds a side, so it is set but still pale.

  4. Lift it off, slit it open along one edge with a knife to make a pocket, and spoon a quarter of the egg mixture inside.

  5. Press the opening closed, return the paratha to the tawa with a spoonful of ghee, and cook 2 minutes a side over a medium flame until the egg has set inside and the outside is golden and crisp.

  6. Cut it in half and eat it straight off the pan with chai.
