How to cook it

  1. Wash the spinach well and chop it roughly. Peel and dice the potatoes small so they cook in the same time.

  2. Heat the oil and fry the chopped onion until golden, about 6 minutes, then add the sliced garlic and grated ginger for 40 seconds.

  3. Add the potato with the turmeric, red chili powder, cumin and salt and fry 5 minutes so the cubes take colour.

  4. Add the water, cover, and cook 10 minutes until the potato is nearly soft.

  5. Pile the spinach on top, cover for 3 minutes to let it collapse, then stir it through and cook uncovered 8 minutes until the water has gone and the greens are dark.

  6. Add the slit green chilies and serve as the vegetable beside a daal or a meat salan.
