How to cook it

Boil the eggs 9 minutes, cool them under running water, peel them, and prick each one two or three times with a fork so the masala gets inside.

Heat the oil and fry the sliced onion until golden brown, about 8 minutes, then add the ginger garlic paste for 1 minute.

Add the chopped tomato, turmeric, red chili powder, coriander powder, cumin and salt and bhunno 8 minutes until the tomato dissolves and the oil separates.

Pour in the water and simmer 5 minutes to make a loose shorba.

Slide the eggs in, spoon the gravy over them, and simmer gently 6 minutes so they take the colour without the whites toughening.

Finish with garam masala, slit green chilies and coriander leaves. Serve with hot roti.
