How to cook it

  1. Heat the oil in a pot and let the cumin seeds sizzle for 30 seconds.

  2. Add the onion, garlic, and ginger and cook until golden, about 6 minutes.

  3. Stir in the turmeric, coriander, chili powder, and chopped tomatoes and cook until the oil separates, about 6 minutes.

  4. Add the cubed potatoes, peas, salt, and a cup of water and bring to a simmer.

  5. Cover and cook until the potatoes are tender and the gravy thickens, about 18 minutes.

  6. Stir in the garam masala, finish with cilantro, and serve hot with roti or rice.
