How to cook it

  1. Wipe the okra dry, trim the ends, and cut into short pieces so it does not turn slimy.

  2. Heat 2 tbsp oil in a wide pan and saute the okra over medium-high until it loses its stickiness and browns at the edges, about 8 minutes, then set aside.

  3. Add the remaining oil and let the cumin seeds sizzle, then cook the onion, garlic, and ginger until golden, about 6 minutes.

  4. Stir in the turmeric, coriander, chili powder, and chopped tomato and cook until saucy, about 5 minutes.

  5. Return the okra, season with salt and amchur, and toss gently over medium heat for 4 minutes.

  6. Sprinkle with garam masala and serve hot with roti or rice.
