Fry the thinly sliced onions in half the oil for 12 minutes until deep golden brown, then lift out half for layering later.

Add the ginger garlic paste and chicken to the pot with the remaining onions and sear 8 minutes until the pieces lose their raw colour.

Stir in the whisked yogurt, chopped tomato, red chili powder, turmeric, coriander powder and salt, and bhunno 12 minutes over medium heat until the oil separates and the masala clings to the chicken.

Add a splash of water, cover and simmer 15 minutes until the chicken is tender and the gravy has thickened.

Soak the rinsed rice 20 minutes, then boil it in the salted water with the cardamom, cloves, cinnamon and bay leaves for 6 minutes until three quarters done, and drain immediately.

Layer half the rice over the chicken, scatter the reserved fried onion, mint, coriander leaves, slit green chilies and lemon juice, then add the rest of the rice and the saffron steeped in warm milk. Cover tightly, cook 20 minutes on the lowest heat, and rest 10 minutes before opening the pot.
