How to cook it

  1. Dry roast the grated coconut over low heat until deep golden, about 6 minutes, then roast the dried red chilies, coriander seeds, cumin seeds, peppercorns, cloves and cinnamon in the same pan for 2 minutes.

  2. Cool and grind everything together to a smooth paste with a splash of water; this is the Malvani masala, and it is redder and less sweet than a Goan xacuti masala since it skips the poppy seed and star anise.

  3. Heat the coconut oil in a heavy pot and fry the chopped onion until golden, about 8 minutes, then add the ginger garlic paste for a minute.

  4. Add the chopped tomato and turmeric and cook 5 minutes, then stir in the ground masala and bhunno 8 minutes until the oil rises to the top.

  5. Add the chicken and sear 6 minutes, turning to coat every piece, then add the kokum, salt and water.

  6. Cover and simmer 20 minutes until the chicken is cooked through and the gravy is thick and fiery red.

  7. Finish with coriander leaves and serve hot with steamed rice.
