How to cook it

  1. Heat the oil in a large skillet over medium heat and cook the onion until soft, about 6 minutes.

  2. Add the garlic and ginger and cook until fragrant, 1 minute, then stir in the curry powder, cumin, and turmeric for 30 seconds.

  3. Pour in the diced tomatoes and simmer 5 minutes to thicken.

  4. Add the drained chickpeas and the coconut milk, season with the salt, and simmer until slightly reduced, about 12 minutes.

  5. Stir in the spinach until wilted.

  6. Serve over the cooked rice.
