How to cook it

Finely chop the chicken livers.

Heat the olive oil in a deep skillet over medium-high and brown the ground pork, then add the livers and cook until no longer pink, about 3 minutes.

Add the onion, celery, bell pepper, and garlic and cook until softened, about 6 minutes.

Stir in the rice, cajun seasoning, salt, and pepper to toast for 1 minute, then pour in the broth and add the bay leaf.

Cover and simmer over low heat until the rice is tender and the liquid is absorbed, about 20 minutes.

Discard the bay leaf, fluff with a fork, and fold in the scallions before serving.
