How to cook it

  1. Pat the fish steaks dry and marinate with the ginger garlic paste, red chili powder, turmeric, ground coriander, lemon juice, and salt for at least 20 minutes.

  2. Just before frying, dredge each piece lightly in the rice flour to coat.

  3. Heat the oil in a wide skillet over medium heat and shallow fry the fish in batches with a few curry leaves until deep golden and crisp, about 4 minutes per side.

  4. Drain briefly on a paper towel and serve hot with a wedge of lemon.
