How to cook it

  1. Grate the raw papaya to a fine paste, this is what melts the mince as it rests, and grate the onion too, squeezing out most of its liquid.

  2. In a bowl, mash the mutton mince by hand with the papaya paste, grated onion, ginger garlic paste, chopped green chilies and coriander leaves until the mixture turns smooth and slightly sticky.

  3. Work in the roasted chickpea flour, red chili powder, garam masala, ground cumin and salt, then cover and rest in the fridge at least 20 minutes so the papaya can tenderise the meat.

  4. Divide into 12 portions and press each into a thin, smooth round patty between your palms.

  5. Heat the ghee in a wide flat pan over medium heat and fry the patties in batches, 3 minutes a side, pressing gently, until a dark crust forms and the centre is just cooked through.

  6. Serve hot, three patties to a plate, with a wedge of onion and a squeeze of lemon on the side.
