How to cook it

  1. Clean the fish and cut into steaks or pieces, rub lightly with salt, and set aside.

  2. Dry roast the coriander seeds, cumin seeds, and dried red chilies for a minute until fragrant.

  3. Grind the roasted spices with the grated coconut, garlic, turmeric, and a little water into a smooth masala paste.

  4. Heat the oil in a pot, add the chopped onion, and saute until soft, then add the chopped tomato and cook until pulpy.

  5. Add the ground coconut masala and cook for 5 minutes, stirring so it doesn't stick.

  6. Add the water, tamarind pulp, and salt, and bring to a gentle simmer.

  7. Slide in the fish pieces and simmer uncovered, without stirring too much, until just cooked through, about 10 minutes.
