How to cook it

  1. Toss the chicken with the yogurt, half the garam masala, and half the salt and let it marinate 20 minutes.

  2. Soak the cashews in hot water for 10 minutes, then blend them smooth with a splash of the water.

  3. Melt 2 tbsp butter in a pot and brown the marinated chicken in batches, then set it aside.

  4. In the same pot cook the onion, garlic, and ginger until soft, then stir in the cumin, chili powder, and crushed tomatoes and simmer 12 minutes.

  5. Blend the sauce smooth, return it to the pot with the cashew paste, remaining butter, and cream, and simmer gently for 5 minutes.

  6. Return the chicken to finish cooking, about 8 minutes, then crush in the fenugreek leaves and remaining garam masala and serve hot with roti or rice.
