How to cook it

  1. Heat the oil in a heavy pot and let the cumin sizzle, then cook the onions until deep golden brown, about 12 minutes.

  2. Add the garlic and ginger and cook for 1 minute, then stir in the turmeric, coriander, and chili powder.

  3. Add the chopped tomatoes and cook until the oil separates and the masala is thick, about 8 minutes.

  4. Add the chicken pieces and salt and stir to coat, searing for 5 minutes.

  5. Pour in two cups of water, cover, and simmer until the chicken is tender and the gravy thickens, about 25 minutes.

  6. Stir in the garam masala, finish with cilantro, and serve hot with roti or rice.
