How to cook it

Simmer the pork belly whole in the water 25 minutes until just cooked through but still firm, then drain and cool.

Slice the cooled pork belly into thin pieces and cut the leek into wide diagonal slices.

Heat the oil in a wok over medium-high heat and fry the pork slices until the edges curl and turn golden, about 3 minutes.

Push the pork to the side, add the doubanjiang, garlic and ginger and fry 30 seconds until the oil turns red and fragrant.

Add the leek and stir-fry 2 minutes until just softened.

Toss everything together with the soy sauce and sugar and cook 1 more minute before serving.
