How to cook it

  1. Pressure cook the toor dal with the turmeric and water until soft, then set aside.

  2. Dry roast the coriander seeds and dried red chilies briefly, then grind them with the coconut and a splash of water into a smooth masala paste.

  3. Simmer the mixed vegetables in a little water until nearly tender, then stir in the tamarind pulp, ground masala, jaggery, and salt.

  4. Add the cooked dal and simmer together for 10 minutes until the vegetables are fully tender and the curry thickens.

  5. Heat the oil in a small pan, pop the mustard seeds with the curry leaves, pour the tempering over the huli, and serve hot with rice.
