How to cook it

  1. Heat 2 tbsp neutral oil in a large skillet over high heat and cook the garlic and chopped kimchi until sizzling, about 3 minutes.

  2. Stir in the gochujang and soy sauce and cook 1 minute.

  3. Add the rice, breaking up any clumps, and fry until hot and slightly crisp, about 5 minutes.

  4. Drizzle with sesame oil and half the scallions and toss, then divide among plates.

  5. Fry the eggs in the remaining oil until the edges crisp and the yolks stay runny.

  6. Top each portion with a fried egg, sesame seeds, and the remaining scallions.
