How to cook it

  1. Peel and devein the prawns, leaving the tails on, and pat them dry.

  2. Marinate the prawns in the kashmiri chili powder, red chili powder, turmeric, ginger garlic paste, lemon juice and salt for 15 minutes.

  3. Whisk the egg into the marinated prawns, then dust with the rice flour and semolina, tossing until each prawn is evenly coated in a light, dry batter.

  4. Heat the oil in a wide pan or kadhai over medium-high heat until a pinch of the coating sizzles on contact.

  5. Fry the prawns in batches, 2 minutes a side, until golden and crisp; do not crowd the pan or the coating turns soggy instead of crackly.

  6. Fry the curry leaves in the same oil for 15 seconds until crisp, and scatter them over the prawns.

  7. Serve immediately, hot and crackling, with lemon wedges.
