Liver and Onions

How to cook it

Slice the onions and cook in the butter over low heat until deeply soft and golden, about 20 minutes, then set aside.

Season the liver with salt and pepper and dust lightly with the flour.

Heat the oil in a skillet over medium-high heat and fry the liver until browned but still a little pink in the middle, about 2 minutes per side, then set aside.

Stir any remaining flour into the pan drippings, whisk in the beef stock, and simmer until thickened, about 4 minutes.

Return the onions and liver to the pan to warm through and serve hot with the gravy.
