How to cook it

  1. Heat the oil in a pot and brown the lamb on all sides, about 8 minutes, then lift out.

  2. Cook the chopped onion in the same pot until soft, about 5 minutes, then stir in the garlic, baharat, and turmeric and cook 1 minute.

  3. Add the chopped tomato and tomato paste and cook 4 minutes until it breaks down into a light sauce.

  4. Return the lamb to the pot with the water and salt, bring to a boil, cover, and simmer until nearly tender, about 40 minutes.

  5. Add the potato and carrot and simmer 15 minutes, then add the zucchini and simmer 10 minutes more until everything is tender.

  6. Taste and adjust the salt, scatter with cilantro, and serve hot over rice, the weeknight stew families cook as often as any platter.
