How to cook it

  1. Rinse the chicken livers and trim away any connective membrane, then pat dry and cut into bite-sized pieces.

  2. Heat the oil in a wide pan and fry the sliced onion until golden brown, about 7 minutes, then add the ginger garlic paste for 1 minute.

  3. Add the chopped tomato, red chili powder, turmeric, coriander powder and cumin, and bhunno 5 minutes until the tomato breaks down and the oil separates.

  4. Add the livers and turn the heat up, stirring often so they sear rather than stew, for 6 to 7 minutes until they are just cooked through and still tender inside.

  5. Do not overcook past this point or the livers turn grainy and dry.

  6. Finish with garam masala, slit green chilies and coriander leaves. Serve hot with roti.
