How to cook it

  1. Heat the oil in a heavy pot and cook one sliced onion until deep golden and crisp, about 10 minutes, then lift out for a topping.

  2. Brown the chicken pieces in the same pot, about 8 minutes, then add the remaining chopped onion, garlic, baharat, and turmeric and cook 2 minutes.

  3. Add the water and salt, bring to a boil, cover, and simmer until the chicken is cooked through, about 25 minutes.

  4. Lift out the chicken, shred the meat off the bone, and skim any excess fat from the broth.

  5. Rinse the rice and lentils and stir them into the broth, topped up with water to 3 cups if needed.

  6. Bring back to a boil, cover, reduce the heat to low, and cook 18 minutes until the rice and lentils are tender.

  7. Fold the shredded chicken back through, and serve scattered with the crispy onion and raisins.
