Rinse the lentils and simmer in 3 cups of the water until just tender, about 20 minutes, then drain, reserving the cooking liquid.

Meanwhile heat the oil in a wide pan and cook the thinly sliced onion over medium heat, stirring often, until deeply caramelized, about 15 minutes; lift out half for a topping.

Add the cumin and baharat to the pan with the remaining onion and cook 1 minute.

Stir in the rice, the cooked lentils, the salt, and enough reserved liquid topped up with water to reach 2 cups.

Bring to a boil, cover, reduce the heat to low, and cook until the rice is tender, about 15 minutes.

Fluff and serve topped with the reserved caramelized onion.
