How to cook it

  1. Heat the olive oil in a deep pot over medium and cook the thinly sliced onions, stirring often, until deep brown and crisp, about 20 minutes, then remove half for topping.

  2. Add the cumin, coriander, and cinnamon to the pot and toast for 30 seconds.

  3. Stir in the lentils and broth, bring to a boil, then simmer 15 minutes.

  4. Add the rice and salt, cover, and cook until the rice and lentils are tender and the liquid is absorbed, about 20 minutes.

  5. Fluff gently and let it rest 5 minutes.

  6. Serve topped with the reserved crispy onions.
